Seared Scallops with Butternut Squash

Very good recipe! I added a small potato and small onion to the squash, and roasted them all in the oven instead of microwaving. I didn't have any fresh sage, so used rubbed. Served it to neighbors who were over for dinner (my guinea pigs) and everyone loved it. I tend to season to taste rather than to measurement, but the seasonings in the recipe seem like the right ones for the dish. I served it with sautéed spinach. I used two pork tenderloins instead of chops, as that's what I had, and brown sugar instead of syrup, like some other reviews. I also used the entire bottle of beer, and a little vegetable broth as well to add some liquid. All the adults LOVED it, and the kids really liked the pork (they're not the best veggie eaters, although my daughter does like butternut squash when she gets around to eating it) We will be making this again for sure! — bkprice13 1/12/2015

Simple and tasty, although the sauce was a little sweet for our taste. I think next time I will use a little more soy sauce and mustard, and little less sugar. The salmon cooked up perfectly, though, and was very moist! I baked it covered in the convection oven for 13 minutes on 375, and that seemed to work perfectly! — hgm110 7/29/2014
