Beef Casserole with Creamy Cheese Pasta

This was really good! I used ground turkey instead of beef, and added a few tsp of red pepper flakes to the meat and tomato sauce mixture. I only had vegetable stock on hand, and only had cheddar cheese to use for the cheese sauce. Instead of mixing the meat mixture with the pasta and cheese sauce, I mixed the pasta shells with the cheese and spread it in a casserole dish. Then, I topped the pasta with the meat mixture and topped that with a bit of shredded parmesan and cubed mozzerella cheese. I baked it until the mozzerella was just starting to turn brown on top. SOOO GOOD! I will be putting this on my "make again" list. 3/27/2013

I wanted to like this recipe. I found that the sauce to noodle ratio was unbalanced - but even when I used 5 cups of pasta instead of 3, the noodles were still swimming in the sauce. It was more like soup. Perhaps I should have let the sauce simmer for more than 90 minutes...other than that, I followed this recipe exactly.
