Anti-soccer mom in Bethesda Maryland. Some of my favorite things to do are birding, reading, watching non-Hollywood films and trying out new recipes. My daughter a vegetarian which makes cooking dinner for the family a lot more challenging.

Armenian Lentil Soup

This was delicious. I really liked it, but unfortunately my children were not impressed. The only question I have is what line 6 of the ingredients should be. I assumed it was oil since oil is mentioned in the directions, but not in the ingredients. Other than that, it was a good recipe. Perhaps I'll make it again when my children are grown.

Italian Beef

Italian Beef

I grew up in the Chicago area and Italian Beef was a common listing on many restaurant menus as well as the signature dish at a number of sandwich shops. This recipe reminds me of my favorite Italian Beef joint: Beef Villa. After you have had your fill of Italian Beef sandwiches and only the broth is left, use the broth to make a delicious Italian Beef soup by adding whatever vegetables you have handy, including diced potatoes. I also grew up in Elgin and frequented Beef Villa often. I do not get back that often but when I am in Chicago always have to get an Italian Beef and of course pizza!! I live in the Dallas/Ft Worth area now and there is a local place that specializes in Chicago sandwiches and their Italian Beef is pretty close to what I remember. Pizza though......still searching!! :-(

Yes the sandwich shop whose signature dish I compare the recipe to is the Beef Villa in the Elgin area. I grew up there.
