This is fabulous! So simple, but so, so good. I have made this using boneless thighs, boneless breasts, and breast tenders, and it works marvelously. Usually I make a reduction from any leftover sauce to serve on top of the meat or on an accompanying side dish ( cous cous, pan-fried slices of tofu, polenta, etc).
I have used glass or stone casserole dishes and haven't had any issues with clean-up.
