Really Really awesome burrito recipe. I found it varied with a lot of different tastes which all help each other. Its not overloaded with any one ingredient - including the meat. Excellent, Tasty, and spicy enough even with Mild Keilbasi. The Vinegar matches the brown sugar and mustard and melds perfectly with the Keilbasi and potato. It is a well balanced dish. Spinach adds a little color and makes you feel like you're eating something healthy. Good mental effect. Only thing I would say the step "boiling" off the vinegar/sugar mixture is misleading - at least in my experience it isn't enough total liquid to actually boil. I would definitely make again - Especially don't skimp out on the fresh Parsley - it is what really brings this dish together.
