shrimp and asparagus risotto
I'm no chef, but I do have a passion for anything food related. I love to eat, discuss, look at and shop for food. The company of friends and food is a combination I'll never grow tired of. When I'm not eating or cooking, I enjoy reading, hanging out with friends, watching movies, and being outdoors.

I love eating Italian, Japanese, Greek, Seafood, American.....really anything. I'm definitely the least picky eater around. I love to cook just about anything. My favorite dishes to cook are my slow cooker chilli, pasta with just about any combination of ingredients, soups, and appetizers/dips for company to enjoy.

Shrimp and Asparagus RisottoDo not overcook the asparagus or the shrimp. It is best to have the asparagus slightly undercooked with a vibrant green color to it. The shrimp should be removed from the pan as soon as it is pink throughout. Otherwise it may become too tough in the final dish. [I posted this recipe.]
