Creamy Roasted Tomato Soup

This was very time consuming. Core cherry tomatoes? It took forever! Add 24 oz. chicken stock and cook down to a third? I had to add more chick stock to make a soup! I substituted Asiago cheese b/c I could not find Neufchatel but the taste was okay. I won't make this again as it took way too long. I think the tomatoes are better in the summer but who wants to eat soup when it is hot?
