I love to eat and I love to cook!  I'm a recipe follower, and although I'll tweak them to meet my needs I don't usually cook a big meal without a recipe to follow.   I love all foods, all cuisines with only one exception - NO BELL PEPPERS!  :)  

I love so much.... fresh seafood and veggies, Spanish/Cuban food, Cajun food, Mexican, Italian, Indian.  I most enjoy cooking dinner with my hubby Jeff, and baking for friends & family.

It firms up as it cools, so unless you serve it hot, add a bit more liquid.Make up to 4 days in advance. Made this yesterday. Quick and easy, I made it in advance and kept refrigrerated until after dinner. We had it with a dollop of whipped cream for dessert. Very tasty! Question about the recipe. There's no chocolate ingredient! And, the instructions seem to indicate a cake mix is used? But there's not one in the ingredient list. Is there a mistake?
