Corn, Cilantro and Black Bean Soup (Mf)I was surprised at how yummy this was! My entire family gobbled it up and asked for seconds the next day! I made the black beans in a crock pot and used my own homemade chicken broth. As an added touch, I made my own nachos using corn tortillas I seasoned and put in the microwave. It was a low cost, healthy meal we will make again and again!

Mujadarah (Rice and Lentils)I have been trying to make mujadarah for years and this recipe finally made it possible! The only thing I needed to do was cook the rice longer, about 45 minutes. My children enjoyed this dish and would even bring it for a school lunch. I am so happy and can't wait to make this again!

Angel Food CakeDon't give up when you make this recipe. I recommend cooling the mixer blades to help whip up the egg whites! Serve with fresh berries and powdered sugar. So fancy and delish! [I posted this recipe.]
