What's for dinner?
I am the very busy mother of 3 great kids! They are 8 mos, 4 and 11 yrs. I am an accounting clerk for a local mall and work fulltime. I have spent many years creating and cleaning up the mess and have finally mastered the task of feeding them well, feeding them fast, and not spending the little bit of time I have with them cleaning it up! The other big coal in the fire here is that these meals all have to be "bypass friendly". I love to eat, therefore I needed to find recipe's that fit our lifestyle, that I could eat too! I had Gastric Bypass in 2003 and lost 200 lbs. My intake is limited and I like to make the best of it! Cooking is and always has been theraputic for me. On my worst days, I can start off in tears and once I am in my kitchen, I can create a perfect meal and feel all better! My favorite thing is to have a bunch of people waiting for the end result! Cooking for a crowd drives me to peak performance! I am best known for my unique sauce creations! I hardly ever use a recipe, but when I do, I get the idea and build on it for my own creations!
I just love to cook! I tend to steer clear of baking, although I make a mean Cheasecake! "No Bake" deserts are where I like to create! My best work is done at the stove! My favorites are pastas and vegi dishes using my unique home made sauces.

Crockpot Western Omelet CasseroleThe only comment I have is that it is important not to over cook! We didn't shut it off in time and it got a pretty gross consistency. Otherwise, the dish is great. It was a big treat to find this for the crockpot. We've been making the breakfast casserole for years and taking the time to do it in the morning! This was awesome!
