An absolute winner. My kids loved it and it was so simple to make. The hardest part was soaking out the grit from the leeks. I made this with soy milk since we are lactose intolerant and it was delicious!

I did take a few liberties in making this. I used vegetarian sausage mix and added Italian sausage spices to make my own "vegetarian Italian sausage". I also made my own version of a non-dairy cream, and of course my own homemade chicken-less bullion. Health problems can bring a person to be creative in their cooking. LOL! The end result was absolutely incredible. I don't see how this can only serve 6. I have two teenage boys and they went back for seconds so we ate 6 servings and still had over half left! I am definitely making this again after hockey games this winter.

Smoky Sausage Jambalaya

Turned out really good. Only I had to mess with the recipe as usual. I made a roux, need a roux for the right color and taste. Then I had to add mace and cloves, for some reason the flavor always seems to be missing something without them. I found the texture a bit mushy, since I think the tomatoes and vegetables also add moisture to the dish, so next time I'll use a cup and a half of rice.

So okay I used regular Tillamook and Kraft cheeses, but it was so good. I mixed cheddar and pepper jack cheese to make this. It was so much better than I thought it would turn out to be.

All that grating was more than I planned on, the end result was delicious. I think the reason for the onions to be grated rather than chopped is it helps to thicken the sauce so it isn't soupy.
