I am a "young" 77 year old senior citizen that enjoys bird watching, nature, the computer, collecting recipes and cooking. I am "retired" from operating our shrimp boat with my husband in Port Aransas, Texas and our last adventure was owning and operating a hobby shop in Corpus Christi, Texas during which we raced RC (radio controlled) cars. I've also enjoyed painting portraits and landscapes, but that has fallen somewhat by the wayside since doing more cooking and freezing/canning fruits and vegetables. Hubbie is an avid gardener.

I've never met a food I didn't like. Well....except maybe anchovies. I am a confirmed dessert addict which keeps me looking for recipes in which I can use Splenda or some other ingredient that will cut down on calories.

Tried this recipe, but used Duncan Hines Coconut cake mix to get more coconut flavor and it was so easy to make and fabulously delicious. Made this dish and served over brown rice since I didn't have the noodles. Absolutely delicious and easy. Will try with noodles the next time.
