Best Ham and Bean Soup

Out of all of the BigOven recipes I've tried so far, this was my first dud. Just not a lot of flavor to speak of here, even with the extra clove of garlic I added. If making this for the first time, I suggest adding a lot more fresh herbs, like thyme, rosemary, oregano & basil. Go for about 2 tbsp of ALL FOUR. Otherwise this dish is just too bland.

I personally used a whole cup of grated parmesan, & a whole cup of olive oil (made it much easier to mix). It's a new family favorite. My fiance did request that I double the meat next time though.

Ultimate Scalloped Potatoes

After a little tweaking, this was a great recipe. The first thing I did was add ham (between the layers of potatoes and cheese), as I'm sure many others have as well. I also doubled the amount of cheese, and as I'm not familiar with Gruyere, I made my own blend: parmesan, shredded monterey jack, and shredded cheddar. It is now a new family favorite!

Favorite Slow Cooker Italian Beef Sandwiches

Rated this low because although the flavor is wonderful, it's very hard to eat. Even though the meat is shredded, it clumps together on the sandwich & makes it very hard to bite through. So next time I make this, I think I'll use deli-sliced roast beef instead & allow it to soak in the broth in the slow cooker on low for a couple hours. And like the other reviewers have said, definitely add cheese & sauteed onions & peppers. Yum!

Chicken Enchiladas with a twist

I added about 2/3 of a large onion, diced, & two diced green peppers to the enchillada filling to give them some texture. Also, I personally don't care for enchillada sauce- it doesn't really have much of a flavor. So I substituted mild taco sauce instead. With my tweaks, this recipe turned out GREAT
