Easy, delicious! If you dice the potatoes they will cook in 20 minutes. I turned off the heat and melted the cream cheese with just with the heat of the soup itself. If you make this with red potatoes, leave the skins on. The added color is good and it is even faster to make. — CFSWoman 1/16/2012
