Warm Almond Blackberry Cakes

Warm Almond Blackberry Cakes

I did these in four ramekins and they were wonderful, but the size was just a touch too big for me. I think just a little smaller would be perfect, so I’ve adjusted the instructions to make 6 instead. You want low, flat ramekins if you have them, so that you get more of the crisp, golden brown crust, but I’m sure it would still work with deeper ones; you may just need to bake them a little longer to make sure the center is done. Oven Fried Chimichangas

Oven Fried Chimichangas

Although I haven’t done it yet, these would be easy to customize - add beans, use beef or pork instead of chicken, use a salsa verde instead of the red salsa, etc. [I posted this recipe.]

Pan Fried Gnocchi with Goat Cheese Sauce

Pan Fried Gnocchi with Goat Cheese Sauce

If I were to do it again, I might actually separate the gnocchi from the rest of it and leave it sauceless - it was so good in its crispy state, and the sauce, though minimal, was somewhat distracting. [I posted this recipe.]

B'Stilla

B'Stilla

I made mine as individual pies in 5? ramekins, but you could do this as one single large pie, as little mini pies using a muffin pan, or even just fold little envelopes with your phyllo and make hand-held pies. [I posted this recipe.]
