I love cooking and experimenting with new recipes and food ideas. My family and I are part of the "full-timer's" RV population, and are currently "docked" near Ft. Irwin, CA.  My kitchen may be small, but it doesn't stop me from finding new ways to prepare great meals. I am challanged to find healthy new recipes friendly to my environment, but consistently find new ways to prepare some of the tried and true favorites my family loves. I love to travel and be outdoors hiking, climbing and geocaching. We also spend a great deal of time on our Harley or exploring the 4x4 trails in the local area.  What a journey, and what an adventure!

Lemon-Garlic Chicken

Lemon-Garlic Chicken

I used chicken breasts, and added about 1/4 cup of champagne to the marinade. It was phenomenal! Definitely be eating again. — promfh 10/26/2012
Broccoli Salad Deluxe

Broccoli Salad Deluxe

Used lite mayo, omitting the bacon & raisins. Was very easy to prepare and a good side to almost anything. — crittermom17 9/7/2012
Low-Carb Mexican Broccoli Quiche

Low-Carb Mexican Broccoli Quiche

Easy to keep in the fridge for later in the week. Just pop in the microwave for about a minute, and breakfast is served! Cheesy goodness with a little kick. :) — DrgnHrt 4/10/2012
Low-Carb Mexican Quiche

Low-Carb Mexican Quiche

Made w/ jalapenos rather than green chili's. AWESOME! I'm not a huge fan of quiche...but this was terrific and will absolutely be a regular for me! — DrgnHrt 3/23/2012
Helen's Low-Carb "Potato" Salad

Helen's Low-Carb "Potato" Salad

I was skeptical of using cauliflower in place of potatoes, but it actually tasted really good! Even the kids smiled in amazement. Definitely an easy go-to for the summer months. **I didn't have frozen cauliflower on hand, so I used fresh instead. — DrgnHrt 3/23/2012
Edamame Salad

Edamame Salad

Served it up with some Blackened Flounder Fish Tacos. Very fun, colorful, nutrient-dense side dish with lots of texture. Will be making this again. — bigmeg33 3/14/2012
Jamaican Jerk Chicken

Jamaican Jerk Chicken

Amazing! I skipped out on the Scotch Bonnet chiles and used some crushed red pepper instead since my son is a little "sensitive" to spicy foods. ;) Worked out very well. Fabulous flavor! — sgrishka 2/11/2012
Grilled Lemon Lime Chicken over Angel Hair

Grilled Lemon Lime Chicken over Angel Hair

Made this the other night and everyone really enjoyed it. Was an easy marinade to make up, and I actually reserved about 1/2 cup of it for use over the top of this dish rather than a marinade. I marinated in a ziplock back, so it worked out perfectly and left just enough for the meat in the bag. Prepared with fresh broccoli and gave a wonderfully light flavor to the meal. — stevemur 2/10/2012
Fiesta Salad

Fiesta Salad

This was quick to make with on-hand ingredients. I even added it as a topping on my favorite recipe for Blackened Salmon Tacos that a friend shared with me a few years ago. The whole family loved it! Definitely on my favorites list. ;) — angeal 2/5/2012

Great recipe. I made up a mushroom sauce for it. Turned out well and will be making this one again. — sbjonas 1/25/2012
Basic Pancake Mix Recipe

Basic Pancake Mix Recipe

Awesome & easy recipe. I think I'm going to make up a big batch of the dry mix so I have it on hand for a quick go-to. The whole gang loved these fluffy pancakes both plain and with blueberries. — jimshim 1/22/2012

Snack Packs - Hiking

Snack Packs - Hiking

I love that you posted this! It's so difficult to find recipes for good "packable" food that doesn't taste like cardboard. So in my browsing I was thrilled to find just a quick "backpack checklist" for the sport. This works great for a day trip with the kids when you have more helping hands in packing than is sometimes preferred. ;) 1/22/2012
Grilled Fish with Brazilian Garlic Marinade

Grilled Fish with Brazilian Garlic Marinade

Very flavorful! We tried it out on tuna steaks, but I can't wait to try it out on a salmon filet. ;) — KeithBaker 1/14/2012
Careys Homemade Baked Macaroni and Cheese

Careys Homemade Baked Macaroni and Cheese

This had a little too much "smokey" flavor for my taste from a macaroni & cheese recipe. If you like the smokey cheese and consider them on your "comfort food" list, you'll probably really like this recipe. — pdxbodyworx 1/14/2012
Spicy Garlic Rosemary Shrimp & Pasta

Spicy Garlic Rosemary Shrimp & Pasta

I added some fresh broccoli to this, which I sauteed in a little extra olive oil and garlic prior to adding shrimp and other seasonings. It turned out great. Thanks for sharing. Very easy recipe that is both quick & simple to make. — digigirltx 1/12/2012
Slow Cooker Citrus Garlic Chicken

Slow Cooker Citrus Garlic Chicken

I loved the idea of a different chicken recipe, but I just don't think the "citrus" is it for me. It was ok, but seemed very sweet to me in a way that I couldn't come to expect from my dinner. Maybe my clementines were just too sweet? Thank you for posting though. I've no doubt this will be a great hit with someone else's pallet. ;) — punkfoocooka 1/11/2012
Southwestern Grilled Chicken Salad

Southwestern Grilled Chicken Salad

Great recipe. Only giving 3 star because of the dressing. It was very good on the chicken but gave the salad itself an odd flavor. Too much something, not enough something else? We haven't really figured it out yet. — CookingPassion 1/9/2012
Beef Stroganoff in Crock Pot

Beef Stroganoff in Crock Pot

Great easy recipe. Put this together and then went out hiking with the kids for the afternoon. It was so easy to just boil some pasta quick when we got back, and it was just the energy kick everyone needed. I did add some fresh parsley at the end and served it with some leftover salad. I also cut butter down to a tablespoon and a tablespoon of olive oil. Agree with "Stewdebaker" that a little white wine would be a great addition to it but haven't tried it yet. 1/9/2012
Creamy Chicken Enchiladas

Creamy Chicken Enchiladas

My family loved this dish! It's a great way to use up leftover chicken too. I didn't have any cream cheese, so substituted with 'Laughing Cow' (1 Swiss, 1 Blue Cheese), and it came out great. Given the nutritional difference, I may do that all the time. In any case it got raves from my crew and I will definitely be preparing this again. Thanks for sharing! — cybergranny 1/9/2012
