Terrific dish and very easy to make. It went so fast at my daughter's International Dinner. I'll be making it just for my family again soon. Thanks!

Alaskan Salmon Chowder

Alaskan Salmon Chowder

This was fantastic and quick. It got better the next day too, but I had to add more liquid as it thickened considerably. Nervous about calories I used 1% milk and reduced fat cream cheese to no adverse effect. It was rich and delicious.

Savoury Baked Chicken Legs

Savoury Baked Chicken Legs

I made this because I wanted something quick out of what I had at home. Unfortunately I substituted a few things--shallots for green onions and mint tea for dried mint. So the dish had a slight undercurrent of tea flavor--or maybe I just imagined it. But it was very good anyway. Next time I'll do it exactly right!

Best Ever Blueberry Coffee Cake

This fantastic cake was quick and easy to make and good for breakfast or a dinner dessert. We ate it outdoors on the deck with fresh blueberries. I've made it as a thank you to friends as well.

Spinach Salad

This was still quick at 15 minutes prep but I did buy sliced mushrooms and pre-washed spinach. It was two generous portions as well.

Amazing Pork Tenderloin in the Slow Cooker

Amazing Pork Tenderloin in the Slow Cooker

This was easy but didn't taste like a slow cooker recipe--and that's a good thing. I had Madeira wine and used that instead and it was great. The au jus was a great touch!

Fish Tacos

Fish Tacos

This was a fresh and delicious meal which I made for our office lunch club. As we have a few aesbestos mouths there, I doubled the habanero in the salsa, which was very mild as written. I served it with corn with poblanos and cream and spanish rice. Delicious.
