What's for dinner?

I moved to Montana from a big city and have enjoyed the beautiful scenery here.We are surrounded by mountains and lakes! The 4 seasons we have here add to the overall feel of being out in the country  I also love to spend time with my husband. We love to go hiking, biking, camping and really do any outdoor activity. Gardening is something I also like to do, since I love to cook with fresh ingredients as much as possible. My favorite memory of cooking is when my family would go camping every year to Yosemite for a week. We would take lots of food (we were a family of nine) that we could cook on an outdoor grill/stovetop. My mom would make soups and all sorts of meals(mashed potatoes,fried chicken, pasta etc.) The aromas of the food cooking in the mountains will always be a memory that I will treasure. Food never tasted so good...especially after a long hike!

I used Hershey's DARK cocoa Try adding different flavors for the vanilla...Irish Cream, Raspberry,Mint, Orange etc. Also substitute some of the chocolate chips with some nuts(pecans, walnuts...), andes mint pieces, butterscotch chips, orange peel, etc... [I posted this recipe.]

Ok, I made this for lunch today. I absolutely loved it! Thank you for introducing me to the velveting technique. I velveted mine in water and refrigerated it overnight...I loved the quick preparation the following day. A delicious meal that I will definitely be making again. Thank you for posting.

I loved the simplicity of this recipe...it came out just as beautiful as the photo. This pairs very nicely with some vanilla ice cream. I opted to use some almond extract instead of the vanilla. I didn't have any blackberries, so I used some blueberries. Thank you for sharing this recipe...it is a beautiful dessert that impresses!

You can do a whole wheat version...try substituting 1 cup whole wheat +1 cup oatmeal flour for the white flour. I also chose to decrease the amount of sugar for the whole wheat version by omitting the white sugar and using just brown sugar. [I posted this recipe.]

Double Chocolate Chip Cookies with Orange Flavor

Makes about 20 cookies, the original recipe was doubled...I halved it. I like to add additional flavorings just to make the cookie even more special. Then you will know that it isn't store-bought. Orange peel/extract is a really good one, as well as peppermint or raspberry. Nuts are optional. You can top the cookies with just a few nuts, instead of mixing it in the cookie dough. Try varying the chocolate chips for variety. If you don't want your cookies to be too chocolaty, omit the chocolate chips [I posted this recipe.]

The kale as it bakes and crisps up will lose most of its volume and shrink quite a bit. So, add the salt sparingly! You may initially see a WHOLE bunch of raw kale and think to add more salt, but a little salt goes a long way. Plus, if you feel the crispy kale needs more salt, you can always add it at the end. Thanks for the parchment paper tip!! I will give it a whirl the next time I make those potato wedges. It's such a pain scraping and chipping away at burnt on crusties!! Specially when you have three little ones pulling at you wanting to play!
