Chile Rellenos - The Real DealThis is a tough recipe because of the peeling of the peppers. If you overcook them they'll be mushy and hard stuff while keeping in one piece. I took off what i could and it helped the batter stay on. Some advice... Use the biggest peppers you can find. You'll need them if you're going to stuff 2 lbs of meat into 4 peppers. I had tons left over.

Caprese Salad (Mozzarella, Basil, Tomato)I did a variation as a salad with cheese and tomato chunks. 86 the balsamic vinegar for a clean light flavor.

Dad's Easy FlanThe most important thing is not to burn the sugar. Also important is to beat the mixture thoroughly since the Condensed milk is like a caramel. Finally, let the flan set otherwise it will turn to mush when you flip it into the serving dish. Enjoy! [I posted this recipe.]
