RuthAnne's Shortcake
I am a WAHM of three beautiful (and picky) daughters just south of Savannah, Georgia. My husband is a former chef, but I'm the one in the family who does most of the cooking. I have always loved to bake. I have a few dinner recipes that I use over and over again, but I would like to add a few to the collection.

RuthAnne's ShortcakeQuick and easy. It made great shortcakes for dessert last night. I'm having leftovers for breakfast this morning. The cakes are just sweet enough to enjoy with coffee. Yum!

Easy Chicken & DumplingsAll the measurements can be adjusted to your personal tastes. I like a soupier recipe so I used two cans each of the soup/broth. You can cut that in half for a thicker version. You can also use the drop method for the dumplings if you prefer a biscuit type dumpling. [I posted this recipe.]

Favorite Chili MacReally liked the beans. I didn't have any chili powder, so I subbed 2 tsp chipoltle and 1 tsp ancho powders. Had a little kick. The recipe made a TON of food, so we might half the recipe next time.

Sweet & Sour BeefI've found that prepping the meatballs ahead of time and letting them sit in the fridge for a few hours works well. They hold together better and cut down on the actual "cooking dinner" time. [I posted this recipe.]

Easy Pineapple ChickenThis was even a hit with my picky 2nd grader. Hubby and I both enjoyed it, although we might add some bell pepper or onion next time. I'll be making it regularly regardless. Quick and easy!
