The ingredients list and procedure were not consistent with regard to the use of confectioners sugar or white sugar in the pastry. I decided to use white sugar. The dough was too sticky and difficult to hold...perhaps there was too much of butter. I added half cup of flour which made it easy to hold. Output was 18 pcs and the shells were thick. However, the lemon curd mousse and the presentation are wonderful.

We can hardly find very good profiteroles here. My husband and I are so happy with the results. We can make our own yummy profiteroles. I made a mistake during the first try. The mixture was not solid enough thus it was a disaster. During the second try, I use high heat to boil the mixture and shifted to medium heat as I put in the butter. Cooking and stirring the mixture is very critical.

Hi Fayemin,

The 1 cup of heavy cream should be enough for 4-5 TBS(or to taste) of lemon curd....as stated in the recipe The Lemon Curd recipe makes much more than what you need for the tarts. I think it makes close to 2 cups. You will only need a bit of it....about 4-5 TBS to mix in with the whipping cream....You can use more lemon curd if you like, it is a matter of taste. Hope that helps.

Hi Fayemin, Welcome to BigOven! To answer your question about the salmon/cream cheese beggers' purse: I used about 3-4 chive leaves, this can vary...add more if you want or don't add so much. Really, you can adjust amount to your liking...the filling is quite forgiving. Hope that helps~Ellie36
