Broiled Chicken with Lemon & Garlic

Broiled Chicken with Lemon & Garlic

I put all the ingredients in my mini chopper including the garlic which I smashed. I also added a small perperchini pepper for some kick. I used fresh basil in the recipe. It was delicious! Next time I will try the thyme for a change. I also squeezed the lemon over the chicken when I removed it from the broiler pan. It seemed to take longer to cook than recipe called for. I used an instant read thermometer to check to see it was cooked enough. Making the sauce in the broiler pan was easy and very good. — bobdeg 12/7/2013

Easy Baked Eggplant Parmesan

Love cooking eggplant in oven. Much healthier and so easy not having to fry all the eggplant. Sometimes I have extra cooked eggplant and I freeze it. I just reheat and chop up for pasta topper! I also cut eggplant lengthwise when I make it- just easier! — HungryKitten 11/3/2013
