Wolflgang Puck's Curried Chicken Satay

Wolflgang Puck's Curried Chicken Satay

Loved the seasoning on the chicken. Slightly spicy on the tongue yet mild in flavor overall. I served this as a main meal with steamed jasmine rice. The vinegar in the dipping sauce recipe was too strong. I ended up diluting it with some store made dipping sauce. Will decrease the amount of vinegar to 2 tbsp next time.

Pork Chops Stuffed with Smoked Gouda and Bacon

Pork Chops Stuffed with Smoked Gouda and Bacon

Love it. Trickiest part was to get the pocket big enough for the stuffing and to time the meat on the BBQ without overcooking it. I made this with roasted potatoes and roasted broccoli. The family gobbled it up!

Steve's Tomato-Basil Soup

Steve's Tomato-Basil Soup

Very yummy! I increased the garlic and decreased the sugar a bit. It's really important to take the soup off the heat when ready to add the cream or it will curdle... Ate it with grilled cheddar on wheat sandwiches...Mmmm, definitely will make again. Maybe I will add some mini tortellinis or rice to it next time.

Buca Di Beppo Chicken Saltimboca

Buca Di Beppo Chicken Saltimboca

Turned out just "so-so" for me. The sauce was too heavy on the lemon juice, too tart. The chicken breast seasoning was a bit bland. All in all, just ok.

Garlic - Parmesan Crusted Pork Chops

Garlic - Parmesan Crusted Pork Chops

Excellent seasonsing, similar to Chicken Milanese. My pork chops were slightly too thick...I would suggest pounding them first. I served them with homemade applesauce, string beans and mashed potatoes. The family LOVED it.

Avocado Tomato Salad

Avocado Tomato Salad

The salad was very tasty and flavorful, unfortunately, it is very acidic and gave my DH terrible heartburn. I would make this again as a "salsa" rather than a side dish.

Chicken Enchiladas with a twist

Chicken Enchiladas with a twist

Made this tonight and the family liked it... I served it with spanish rice and sour cream, which was a nice addition. Next time, I will use Cream of Chicken soup instead of Cream of Mushroom and only use 3/4 can as it was a bit too "soupy".

Best Ever Blueberry Coffee Cake

Best Ever Blueberry Coffee Cake

Yummy!!! A new family favorite... Everyone gobbled this one up in no time!! I used unsalted butter. Will definitely make this again but will use less cinnamon-sugar topping, maybe 2 tbsps instead of 3.
