Chicken MarsalaWonderful and so easy! I will be making this again!

Enchilada CasseroleExcellent! I took some liberties and added black beans and black olives! Will definitely be making again. Makes way too much for 2 people do I froze some before baking; will let you know how it freezes.

Tex-mex Chicken Spaghetti CasseroleExcellent taste. I didn't have Mexican Velveeta cheese so added some jalapenos peppers. Also not sure I will cook as long next times as it was a little dry. When they say it makes a lot, believe it! I froze 3 small aluminum casserole pans for a future quick meal!
