This is a fantastic recipe I've made a half-dozen times. The only hard part for me has been making sure the potatoes are boiled long enough as they take longer than any of the other ingredients. I went a little heavier on the cilantro, since the wife and I like it a lot. I also didn't have any vermouth so I substituted vodka. It was good enough that I don't think I'd switch to vermouth. Brats in beer is a great combination. So many variations, including grilling the brats over medium-low heat and then transferring them to a simmering pot pot of beer and onions. They can be kept ready to serve for hours like this, a great way to prepare for a big party. 8/9/2009
