What's for dinner?
I am an aspiring writer of romantic suspense, mysteries and thrillers. I homeschool my two children and spend most of my time between my writing and my family. I enjoy reading, writing (duh), cooking (lol), movies, singing, and playing games.
My favorite foods are shrimp, avocados, chocolate and French fries.
My favorite dishes are lasagna, shrimp fried rice, California rolls, egg rolls, pizza, General Tso's Chicken, burritos...and the list goes on.
I simply love food in general. I love variety and various ethnic foods. I get bored easily, and I'd rather eat something different every day than the same over and over. I adore Chinese and Mexican foods. I was raised by my Italian mother, so Italian dishes are a part of my culture and loved but not necessarily what I will crave first.
I truly feel eating is a celebration and not just meant for energy and nourishment.

Homemade Baked Macaroni and CheeseMy daughter loved this recipe and ate most of it during the week I made it. I wasn't thrilled, but I have yet to find a mac and cheese recipe that I love. I hate how greasy cheddar cheese is, so maybe I should use a different kind. Other than my personal pickiness, I did love how this recipe didn't contain eggs. I didn't hate it just can't rave about it. However, I would make it again.

Beef StroganoffI just made this for dinner. My children and I had never had stroganoff before, so to my son and I the sauce was a bit weird, but my son dislikes most sauces (including tomato), so I think it was just something we weren't use to. My daughter, however, absolutely loved it. It had a strong sour cream taste to me, which is why I didn't love, love it and why my daughter did. :) The only differences I made were no sherry (don't have any, and maybe that would've made the sour cream lighter), and I use precooked meat and onions I had placed in the crockpot the day before. I am sure I will make this again some day. :)

Chicken CarbonaraThis was an excellent recipe. We had it served over pasta shells rather than rice, and even my son, who won't eat any kind of sauce or condiment, gobbled it up. I love that the sauce was not exceptionally wet or overwhelming. It all blended well and each ingredient added it's own element to the taste and texture of the dish.

Southern SpoonbreadMy daughter LOVED this dish. She ate most of it. I made it exactly as the recipe stated, and it came out moist and delicious. Will make it again--especially if I want to shut my daughter up. *wink*
