I made this and used panko breadcrumbs instead of italian. Seasoned with salt, pepper, and garlic powder. It was delish!
A great idea for "fried like" baked chicken... Bake your chicken on a cooling rack placed on top of a cookie sheet. This allows all sides to get crispy! No oil needed! I'm going to make this again... Next time I'm going to see how this turns out using plain Greek yogurt instead of mayo (for health reasons!)...
