Roasted VeggiesI resisted the urge to add more spices, and it came out great just the way it was. I served it with Carmelized Baked Chicken and rice. The flavors were great together, will definitely make this again.

Caramelized Baked ChickenThis was delicious. The only change I made was add a second clove of garlic. Also I made it with skinless thighs and breasts. I served it with roasted veggies and basmati rice and the flavors were great together.

Ratatouille My WayThis was quite delicious, although I had a few problems. There were a lot of vegetables, so I used two sheets, but still the sheet with the peppers and mushrooms became soupy as the moisture cooked out of the vegetables, instead of browning. And even tho I only roasted them for 20 mins, the veggies were still pretty mushy at the end. But it didn't matter, the flavor was great, and everyone enjoyed it. I substituted basil for the marjoram and thyme, and served it over mini farfalle, which was perfect in my opinion. One final note -- I thought it would make a huge amount, but it was really just enough for six (hungry) adults - not much left over.

Middle-East Style Stew/SoupI'm making this for the second time. I use black beans instead of pinto beans, which we prefer, and it comes out great. I serve it over rice but this would be just fine without rice too I think as a thick & chunky soup... maybe with a spoon of sour cream on top.

Simple Spinach and Red Bell Pepper PastaThis was awesome. I added some sliced hot Italian sausage. My family raved. For those who say it didn't have enough flavor, I would recommend using FRESH basil, adding extra garlic and some crushed red pepper if you like it spicy. I served the red pepper on the side, along with extra Parmesan.

Kristen's Baked Artichoke Spinach DipI made this for Christmas Eve, it was a huge hit. Unfortunately I didn't read carefully enough so I only made one baguette --- two would have easily gotten eaten. We found some tortilla chips and ate some of the leftover with those.
