Spicy Tuna Patties

Spicy Tuna Patties

This was easy to make and it was very tasty. A very nice surprise. Although, I would have liked it a bit spicier so I will probably add a bit more cayenne or perhaps a few dashes of Tabasco. Will definitely make this again. (Photo added)

Taco Soup

Taco Soup

Really easy to make. I used the components per the links suggested instead of store bought. In addition, I added chopped onion, a few cloves of garlic and chopped fresh jalapenos for heat. Incredibly tasty. Will be making this on a regular basis.

Cockle Chowder

Cockle Chowder

Tried this recipe after finding cockles for sale at the local market. It was very tasty. However, it could have been a bit thicker. Problem with the recipe is that it doesn't give an exact amount of water to use to boil the cockles. I used too much water and subsequently added too much cockle liquor per recipe. I added more milk to try to thicken and also let it cook a bit to try to reduce, but the damage was done. I'll try same amount of milk and water next time. Can add additional comments next time I try and if I figure out a better ratio to use. (Photo added)

Grilled Whole Pomfret

Grilled Whole Pomfret

Been looking to cook pomfret for some time, mainly because the fish is always available fresh at the local market, so I picked this recipe as it seemed easy to make. Some notes though, I didn't realize this should be grilled, so I ended up using a frying pan, it still came out tasting pretty good. In addition, I would recommend scoring the fish on both sides before marinating. Finally, as I live in Asia, the pomfret I used was Pacific White Pomfret. Not sure that it would be the same elsewhere although I can't imagine it would taste that different. Will likely make this again. (Photo added).

Frikadeller

Frikadeller

Easy Scandinavian recipe and very delicious! I should point out that the butter/margarine is for the saute and should not be mixed together with the rest of the ingredients. (Photo added).

Low Carb Mexi Baked Chicken

Low Carb Mexi Baked Chicken

This was very easy to make and it tasted great. Although it was a bit sweet which I think was due to the salsa brand I used. Next time I'll try a less sweeter salsa or make my own. Highly recommended. (Photo added).

I cooked this as a side dish and it came out great. Very easy to make too. Although I didn't have lemon, so I used a vinaigrette. Fantastic.

Pasta Con Il Tonno (Pasta with Tuna)

Pasta Con Il Tonno (Pasta with Tuna)

So I was looking for a recipe I could cook with ingredients I already had at home, and I came across this gem. I think the recipe is open to interpretation as I couldn't quite understand why the garlic and chile should be removed. So I left my crushed garlic and chile powder in. The pasta I used was spaghetti, as it was the only pasta I had at home right now. Also, I used dry parsley and I added capers which really enhanced the flavor. And it was sooo quick and easy. I love quick and easy recipes. Will definitely make this again. (Photos added)

Cola Chicken

Cola Chicken

I admit I had some doubts at first, but reading all the rave reviews I thought it might be worth a try. What a pleasant surprise! I do like spicy food, so I did add chile sauce, some garlic and a generous dash of Tabasco sauce to my ketchup. So mine came out sweet and spicy. I should add, I don't usually like sweet, but in this case it has that BBQ sweetness and the addition of spicy hot, made a great combination.

Cold Glass of Milk

Cold Glass of Milk

Moments? I'm pretty sure it takes much longer. At least the way I remember as a child visiting my grandparents in the country. Step 1. Get up at 4:30am, go out to the barn grab a small stool and a pail. Step 2. Give old Bessy a reassuring pat. Sit on the stool and position the pail and grab an udder in each hand and start milking. (Note, if it's a cold winter morning, you need to warm up your hands a bit because Bessy can give a kick if your hands are too cold. Mind you there is nothing like leaning your head on Bessy's warm side on a cold winter morning). Step 3. Let milk stand for a few hours. The cream naturally separates and accumulates on the top. Skim the cream off the top, separate and save for other use. (My Grandmother used to make her own cheese!) Step 4. Cool down the milk for a few hours. Step 5. Pour milk into glass and drink. Nothing like fresh farm milk. If you want to pasteurize, you would have to add another few steps where you briefly boil that milk before yo

Fried Calamari

Fried Calamari

This was pretty easy and quick, although a bit messy if you consider cleaning the squid if you buy fresh. However, flavor was a bit bland even with the salt, pepper and lemon. It's fine if you are eating this with tartar or some other sauce. If you want more flavor, I'd try a batter.
