What's for dinner?
Hasselback Potatoes

I live in a small town in Idaho where the hunting and fishing is great.  Gardening, cooking and sewing are some of my favorite things to do.

I like just about all foods except eggplant.  Oh, and I'm not a fan of vinegar either.  Mexican food is probably my favorite but I don't cook it often because portion control and Mexican food just don't go hand in hand. LOL  Hubby and I do a lot of BBQing all year, even in the winter.  We grind our own beef for hamburger and it is so yummy.  We call it "steakburger" because it tastes like the hamburger used to when we were growing up, more than half a century ago.  We also grind our own pork for sausage and it is so much better than store bought.  I enjoy baking homemade bread, rolls and pizza dough.

The taste is amazing but mine just turned into a big pile of mush in the skillet. I scooped all that out of the pan then added 2 eggs and more bread crumbs to the rest and they made nice patties.

The thought of a dill pickle in the middle of a meat roll is a little odd, but when it finishes cooking the pickle no longer tastes like a pickle. The beef was tender, juicy and delicious. I would give this recipe 10 star4s if I could.

I sauteed chicken breast into it and used a scallion rather than an onion. It didn't take longer than 30 minutes to have it ready for the oven. Very good flavor!
