I have fve kids, and a husband to feed. I have managed to inherit quite  a collection of recipes from my great-grandmother, my grandmother, my mom, my step-mom and several friends. I like to cook. Which is good, with the family size and all. I am trying to put all my recipes in a database. I have a pretty good start but finding the time to do all the data entry is a challenge.

Recipes I've Posted (all 1)

I have feel good foods and favorite foods. When I am sick or stressed my feel good food is beef and broccoli. My favorites include Dr. Pepper, Tootsie Rolls, Dark Chocolate blended with Chili Powder, Sushi and Green Beans in Garlic Sauce.

Scotch Eggs

Scotch Eggs

I first met these at a Renaissance festival and i loved them at first bite. I never did see the crescent rolls on the ones before. Aside from that, this is a very good recipe with a taste close to that from the ones I first tasted.

Fauxtatoes - Roasted Garlic Mashed Cauliflower

Fauxtatoes - Roasted Garlic Mashed Cauliflower

A good alternative to the all carbs indeed. I like it, my family liked it, and I used powdered milk to thicken and a creamer base to it. Worked well.

Lemon Artichoke Chicken

I made this with chicken tenders instead of big breast because of my kids. Other than that I did the recipe to the letter and everyone loved it. Even the red meat guy who just tolerates chicken night asked fo rseconds.

Spaghetti Squash With Garlic And Oil

Spaghetti Squash With Garlic And Oil

I made this to the letter but the squash turned out mush, it was over cooked at 50 minutes. Next time I will cook it less to keep the spaghetti texture and maybe it will be better.

Chicken-and-Black Bean Enchiladas

Chicken-and-Black Bean Enchiladas

To offset the spice factor in this recipe accept that sugar and dairy are pepper's worst enemy. SO i used fresh frozen sweet white corn and lots of extra cheese with mild enchilada sauce and mild tomatoes and green chili's. Then to make up for the flavor I added lime juice to it. Turned out VERY good. I made two trays and there was hardly any left when my family got done with it, then what was left was requested for school lunch boxes the next day.

Beef Stir-fry with Broccoli and Oyster Sauce

Beef Stir-fry with Broccoli and Oyster Sauce

Cornish Pasties

Cornish Pasties

I have four kids and not a whole lot of time, so I admit I cheated. I used store bought pie crusts for the dough. I doubled the recipe and made a baker's dozen of little 6 inch pasties for my kids, they were easier for them to manage at that size. That took one box, or two 9 inch pie shells. Then I made two big ones with another box of 9 inch pie shells for myself and my husband. They went over great! There was some meat left over so I tossed it in the slow cooker with some beef stock and called it stew the next night.
