My husband and I are enthusiastic amateur cooks. We both work full time and tend to cook quick and easy meals during the weekdays but like to do more fancy dishes on weekends and dinner parties.

Recipes I've Posted (all 58)

Chocolate Crackles!

Chocolate Crackles!

These chocolate crackles were super easy to make and tasted great. A real hit at my daughters first birthday party! I even used dark chocolate melts so melted to chocolate in the microwave with the butter for an even faster preparation time.

Vegetable Fritters

Vegetable Fritters

Very yummy, but time consuming and messy to make. If alot of the liquid isnt removed from the grated vege mix it will be too wet to bind together for the fritters. Either try removing more liquid or add more corn flour.

Vegetable Lasagna

Vegetable Lasagna

Still one of my favourite recipes and tastes better after sitting for atleast 4-6 hours to cool and is then less watery and hold better. Original recipe from Dr. Gott's No Flour, No Sugar Cookbook.

Vegetable Lasagna

Vegetable Lasagna

Hi tgaymon, thanks for your comment about the vegetable lazagna recipe I posted. I agree that it can be too watery. I found the longer I cooked the carrot & tomato mixture and let the water simmer off the less watery it was at the end, plus it was also less watery the next day after sitting for over 12 hrs in the fridge, but I usually couldn't help myself and ate some as soon as it was cooked (when it was most runny like many other lasagnas are straight after cooking).

Note: You may also want to drain the tin of chopped tomatoes before adding it. I have usually forgotten this step and gotten a more liquidy lasagna, but it still tastes great. Also, I think the mushrooms could be optional as it doesnt seem to impact the taste very much. So if you don't like mushrooms, you could easily leave them out. The original recipe also didn't include carrots, but I added them to fill out the recipe a little more and include more vegetables. [I posted this recipe.]

Pistachio ice-cream

Pistachio ice-cream

Notes: Pistachio kernels are available from some supermarkets and health-food stores. Microwave tip: Place pistachios in an oven bag and twist the opening to close. Cook on High/800watts/100%, gently shaking the bag every minute, for 2-4 minutes or until lightly toasted. [I posted this recipe.]

Crêpes

Crêpes

I love making crepes. Though I can't read this recipe because its not in english, I know how delicious these are and make them following my own recipe whenever we have soup or something light for dinner. These are yummy with nutella (chocolate spread), jam, ice-cream or fresh fruit. Big Oven, any chance you can add a translating option to your recipes?

Spinach Dip inside a Cob Loaf

Spinach Dip inside a Cob Loaf

Hopefully this recipe displays correctly now on BigOven. I kept having problems with this recipe and the Spiced Indian Chicken getting mixed up on the website. They are both totally different recipes. This should show the Spinach Dip on this page. [I posted this recipe.]

Indian Spiced Chicken

Indian Spiced Chicken

Hopefully this recipe is displaying properly now. I seemed to keep getting problems with bigoven mixing up this recipe with another one. This recipe is suppose to be for Indian Spiced Chicken, not Spinach Dip (which keeps re-appearing). [I made edits to this recipe.]

Chicken Enchiladas with a twist

We too experimented a little with the standard Chicken Enchilada kits and added red kidney beans, chopped pineapple topped with grated cheese and then baked in the oven. They taste great. I also eat mine with some creamed corn on the side, absolutely yummy!

Hi Steve,
Yes its a great new feature of bigoven. I've been wanting to convert all my recipes to a digital version and even get a new cookbook printed up and this will make the process much faster. :-)
