What's for dinner?
I recently quit a behind-the-desk job and began waitressing and sometimes I cook. I'm having a ball! Even after spending hours in the kitchen at work, I enjoy coming home to my own kitchen and concocting meals. I use BigOven a lot in meal prep and to get ideas. I enjoy gardening, reading, cooking and canning. I even specialize in candy making at Christmas. My husband and I bowl (not very well) and love to (tent) camp and go to concerts. 

I would have to say my favorite meal is a nice juicy Rib Eye Steak with sauteed mushrooms, Twice-Baked Potato and a fresh salad packed with different vegetables and cheeses. I enjoy making soups...a year ago I wouldn't have  been able to say that, because I was always afraid to make soups because of a poor roux I made twenty years ago when trying to make Cream of Broccoli and Cauliflower Soup. I have conquered that one and enjoy thinking up new soups. Same with Pizza, my favorite pizza is chicken alfredo. My family always made cooking a family affair, and all our holidays centered around the kitchen. Dad's specialty at Christmas was fudge, Mom made all kinds of other things, like eggnog, brandy slush, rum cake, small cherry-nut loaves of sweet bread, cookies, and toffee and peanut butter crunch. I'm lucky my husband enjoys the culinary arts as much as I do, he is a fantastic cook and also likes to experiment. We host Thanksgiving every year and my husband's turkey is always a huge hit with everyone...he grills them, deep fries them and uses all different kinds of injectable marinades and rubs. We also enjoy weekend breakfasts, we have quite a few favorites.

When I make this recipe next time, I will use more cheese and flour, because I ran out and not all the pieces were covered. I will also use a second flat dish to bread the chicken because the bag method did not really work well for me. The recipe didn't say whether or not to cover the chicken, so I did and I should have taken the foil off about 15 minutes before it was done so it was crispier...it was kind of soggy. Otherwise, the taste was good and the meat was very tender and juicy.

I lost my connection while printing, so I went by memory and used Olive Oil...I also added celery and garlic and omitted the tarragon. It still turned out good...I used frozen green beans and red pepper from my garden...mmmmm good!

I used 2 lbs of meat, so had to estimate and added a few more tortillas and some more enchilada sauce and I only had one can of green chiles, but it still turned out well. The whole family loved it, even the cat! We will be making this again soon.

I used a frozen tomato leftover from my garden and it added the taste of summer to the meal. I also used dried, ground cayenne peppers which added a bit of a kick. Very good!

Mickeys Stuffed Jalapenos

I stuffed the peppers and froze them an hour or so; then I battered them and stuck them on waxed paper on a cookie sheet and froze them. The next night I bagged them in freezer bags to use in the future. I had some batter and some meat mixture left over. I used the meat mixture to make a quick dinner tossing in a few leftover homemade canned cold-packed tomatoes, wild rice and homemade fresh salsa....mmmmmm! good! The next night I used the leftover batter to deep-fry potato chunks and chicken breast chunks and they were very good also; my 16-year old son loved that dinner. I could have used some tips on de-seeding the jalapenos...it was the first time I had ever worked with them; but I ended up using the tip of a corer to get the top of the jalapeno off then used a handy little Pampered Chef Strawberry corer to get inside the larger jalapenos and scooped out the seeds; the thinner ones I used a grapefruit knife on. It was time-consuming but fun.
