We love cajun food.  My father is from Louisiana, and we love all things cajun.  One of my most requested dishes is gumbo.  I make seafood and chicken and sausage.  We also eat a lot of Tex-Mex.  All of the foods that we eat are usually highly spiced, not necessarily hot, though.

Slow-cooked Tex-mex Chicken and Beans

Slow-cooked Tex-mex Chicken and Beans

This is so easy and turns out delicious. I added some Southwest seasoning to the chicken and then sprinkled some over the onions. I will defineately be making this again.

Skillet Penne with Sausage and Spinach

This is even better made the day before you want to eat it. The noodles absorb tons of flavor after sitting overnight in the refrigerator. A quick reheat is all thats needed.

Orange and Oat Scone Recipe

Orange and Oat Scone Recipe

I made a few tweaks to Romney's original recipe, and they are reflected below. I use whole wheat pastry flour here, but you can use unbleached all-purpose flour, or a blend of both if you like. This version of the recipe makes 8-10 huge scones. The next time I make these I'll likely pat the dough into two 4-inch rounds and cut each of those into 6-8 smaller scones before baking. Peter Reinhart's Napoletana Pizza Dough Recipe

Peter Reinhart's Napoletana Pizza Dough Recipe

Heidi notes: Peter's recipe says the olive (or vegetable oil) is optional. I use it every time - always olive oil, not vegetable oil. I love the moisture and suppleness it adds to the dough, and it makes your hands soft too. [I posted this recipe.]
