Mix and Match Casseroles

Loved it! Hamburger; frozen, chopped onions & peppers; frozen corn; whole grain rice; salsa instead of tomatoes; seasoned to taste; topped with cheese. I didn't bake it, just prepared it in an electric skillet & melted the cheese at the end. Cheap, quick, easy, healthy AND balanced, all in one dish. What more can you ask for? Will definitely try it again with different ingredients!

Suzanne's Chicken Picatta

I'm always looking for quick, easy, healthy meals. This fit the bill & was delicious. I'd like to try it with a little more EVOO & a little less butter, though it probably won't be quite as tasty. Also thinking about adding garlic. By the way, I was out of white wine, so I used red, and it was still great.
