Elegant and Dramatic Strawberry Cream CakeRemove the angel food cake from its container, and invert it onto a cake stand or cake plate. Cut a three-fourth-inch slice horizontally from the top of the cake and set it aside, remembering the orientation (for placing it back on top later). Now, cut about one half-inch from the center hole and one half-inch from the outer edge of the cake with a sharp knife, hollowing out a channel between the inner and outer edges of the cake. Carefully cut and pull cake pieces out with your fingers, leaving about one half-inch layer of cake on the bottom. Reserve the removed cake pieces. Beat 8 oz. cream cheese with a mixer, until light and fluffy. Add 14 oz. sweetened condensed milk, one third cup lemon juice, and 1 teaspoon almond extract. Beat well, until smooth and combined. Sour Cream and Green Onion Smashed PotatoesBecause when I paste this recipe to Big Oven . com it changes the fractions to decimals and somewhat gives wrong measurents I will repaste the ingredients Ingredients: 3 medium to large Idaho baking potatoes, washed and cut into chunks (Leave the potatoes unpeeled.) 1 tablespoon salt 1/2 stick of butter or margarine 8 oz. sour cream 1 bunch of green onion tops, washed, dried, and sliced paprika, to taste Pour water into a medium to large pot, until it is half full. Add 1 tablespoon salt and bring water to a boil. Add prepared potato chunks. Cook for about 20 minutes, until potatoes are fork-tender, but not mushy. Drain potatoes through a colander into the sink and discard the cooking water. Place the cooked potatoes back into the cooking pot. Add 1/2 stick butter or margarine and 8 oz. sour cream. Mash by hand with a potato masher. (If you do not have a potato masher, you may use a fork to mash the potatoes.) When "smashed" to your desired consistency, add the sliced bun

I'd almost given up trying to compete with my Italian mother-in-law's meatloaf (who won't give me her recipe). I'd literally given up trying to make it, but I thought I would try to one last time when I saw this. My husband loved it!! Best of all, it is sooo quick and easy to make. I'm so thankful because I think my hubby has a new respect for his Irish wife:-)
