I live in the suburbs of small city in what used to be Steel Bowl of USA and now is the Rust Bowl.  I myself worked for 30 years in a car assembly plant. I have been married 36 years and had 1 daughter, Sarah Lynn.  I love to watch good movies and also mke new recipes that my family and friends will love.  Living life simple is my way of coping with the world we live in now.  Easy should be my middle name. Looking forward to sharing and caring here at this great site and I thank the creator of this as it has made my life easier.    Laura Scalloped Potatoes & Ham Sweet Potatoes Pineapple Upsidedown Cake

Now, cut about one half-inch from the center hole and one half-inch from the outer edge of the cake with a sharp knife, hollowing out a channel between the inner and outer edges of the cake. Carefully cut and pull cake pieces out with your fingers, leaving about one half-inch layer of cake on the bottom. Reserve the removed cake pieces. Beat 8 oz. cream cheese with a mixer, until light and fluffy. Add 14 oz. sweetened condensed milk, one third cup lemon juice, and 1 teaspoon almond extract. Beat well, until smooth and combined. Fold in reserved cake pieces and 2 cups sliced strawberries. Spoon into channel formed by removing cake pieces. Spread the mixture gently, but pack it well enough that there are no unfilled holes. Add 1 tablespoon salt and bring water to a boil. Add prepared potato chunks. Cook for about 20 minutes, until potatoes are fork-tender, but not mushy. Drain potatoes through a colander into the sink and discard the cooking water. Place the cooked potatoes back into the cooking pot. Add 1/2 stick butter or margarine and 8 oz. sour cream. Mash by hand with a potato masher. (If you do not have a potato masher, you may use a fork to mash the potatoes.) (Note: I used 1 whole large onion in my video, but I think most people will like this recipe better with 1/4 to 1/2 onion, chopped-unless you *really* love onions!) [I posted this recipe.] — ladybugplus 5/7/2010

I'd almost given up trying to compete with my Italian mother-in-law's meatloaf (who won't give me her recipe). I'd literally given up trying to make it, but I thought I would try to one last time when I saw this. My husband loved it!! Best of all, it is sooo quick and easy to make. I'm so thankful because I think my hubby has a new respect for his Irish wife:-)

Hello! This looks like a great recipe, but I'm curious about the comment about the enchilada sauce. It looks like you didn't complete the comment? Thanks in advance for your help.
