Easy Thai Coconut Ginger Soup

Easy Thai Coconut Ginger Soup

I also love Thai soups, so when I got a crockpot this was the first recipe I tried. I made a few modifications, such as using a third of all the ingredients except the chili sauce. I also added one package of extra firm tofu and a can of drained bean sprouts. I also decided to serve it with some cooked brown rice thrown in, which I enjoyed very much. Also, I couldn't find straw mushrooms at the store so instead I threw in some sliced mushrooms. — sprite67 1/10/2013

Not bad! For my first time making curry this was a very doable recipe. I would like to have more veggies in it, like potatoes and carrots. Also the sauce came out a little thin for me. Other than that, great recipe! — Bageria 8/19/2012

I couldn't believe brussels sprouts could taste this good! The recipe was easy, and all the ingredients were already in my kitchen. — sgrishka 8/17/2012

Hey Just wanted to give you some pointers on the sauce and how thick it is. If it is two thin for you the after you put in the coconut milk wait longer before moving on to the next step. The longer you wait the sauce gets drier and the over all meal will be thicker. The other thing I've found is the first day I make this it is always slightly to runny for me as well, however I leave it in the fridge and on the second day it's much thicker sauce.

Please go ahead and add any veggies you want to this as you can see from the other posts other people have added veggies. I make veggie side dishes so none are needed in this one for my family. Glad you like it and hope this was able to help with your issues.
