That's a picture of my fur baby Precious Puddin' Yep, I named her after a food because she is so sweet. We live in the NY southern tier where I am an internet junky. I work on a computer then come home to surf the web. I stay in touch with family and friends on Facebook and email. Poor Precious, sometimes she just sits by me and moans her displeasure with my obsession.

I have a horrid sweet tooth. I'd eat cookies, pies and ice cream from morning until night if I could. But I can't because while I adore sugar it hates me. I get odd symtoms when I over indulge, such as insomnia, headaches, acne, to name a few. So consequently, I try to stay low carb. Easier said then done with all the treats calling my name. Even treats made with splenda wreaks havoc with my body.
I never liked vegetables when I was growing up. I've since discovered I like vegetables just don't like the way my mom cooked them. Sorry mom! Who knew that I would grow up to enjoy braised red cabbage, fried brussel sprouts, roasted rutabaga, mashed turnips. I would have ROFL if you told me that when I was a child.

Creamy Leek & Cauliflower SoupAssuming the TABLESPOON of pepper is a typo and should be TEASPOON, I give this 5 stars. I substituted Old Bay seasoning for the peppers as my tummy can not handle hot spicy. And used low fat half and half as I didn't have any cream. Very tasty and comforting on a winter day. This is my new go to comfort soup.

Tuna Noodle Casserole (by Marianne Stanco Leal)As I try to stay moderate carb, I made this with Dreamfields pasta and replaced the breadcrumbs with additional cheese.. I baked this in individual bowls and found it to be creamy enough. Very tasty, filling but caloric.

Neece's Pumpkin SoupVery good recipe. I doubled the pumpkin as I like a strong pumpkin flavor. I used low fat half and half - well that's what I had. Next time I'll eliminate the onions to give me a nice smooth bit free soup. The 1/4 tsp spice, 1 tsp molasses and 1 packet splenda was all that I used and really perks up this soup.

Rice Balls (Arancini)If you find the rice balls break apart when deep frying, try putting them in the refrigerator first. When cold they hold their shape without crumbling in the fat. And we never had to bake to fully cook the egg. That hot fat is all that is needed. Manga!

Walnut CookiesMy friend's mom made these when I was growing up. Back then mom's cooked to share with the neighborhood. :) I ate lots - yum. Don't these have a Polish name?

Birds Nest (Eggs and Toast)Something about the buttered bread cooking along with the egg that makes this taste better than just a fried egg with buttered toast.

Cherry Cream Cheese TartsThese aren't from Paula Deen. They are a very old recipe from Philadelphia Cream Cheese box. I used to make these for family when I was a teenager - 3 decades ago. The trick to making these extra good is to whip the batter for a long time to incorporate air into it. Makes them extra creamy.

Black Bean SoupVery flavorful and easily put together soup. I used black soy beans for a reduced carb version. I also used salsa with lime instead of adding the lime juice as I do not use lime frequently.

|
Smashed Cauliflower with OnionsI cook this in a risotto fashion by adding the broth a little at a time. The pot should be moist during cooking but at no time should the vegetables boil in broth. [I posted this recipe.]

zucchini, tomatoes and cheeseI use the optional broth to give the dish added flavor. Because the cheese you use may be salty I left salt out of the recipe. Thus, taste first and add salt as desired. [I posted this recipe.]

Low Carb Almond Torte for 2I made this in my toaster oven. No need to heat up a huge oven if you have a smaller one. [I posted this recipe.]
