Quinoa and Black BeansI bought the Quinoa to try and wasn't to happy with it cooked plain like rice, but with this recipe, loved it. I ddn't have vegetable broth, so used chicken broth.

Kung Pao ChickenI didn't have rice wine, so substituted rice vinegar. Sherry could be another good substitute. I've seen that used in other Kung Pao recipes. Rather than cutting the chicken in cubes, I sliced it. It was delicious.

Vanishing Oatmeal Raisin CookiesI've made these for years. I use 1/2 cup Crisco and 1/2 cup butter and I under bake for a chewy cookie. Butter alone is good, but the cookie turns out flatter that way.

Good n' Chewy Chocolate Chip CookiesIn the past, I've under baked and used shortening to have a soft chocolate chip cookie. They were good, but these take good to a new level of deliciousness. This is a great chocolate chip cookie. Thank you, mad monk Rasputin look alike. LOL

The World's Moistest Parmesan Crusted Baked ChickenI didn't have Italian bread crumbs, so made a Ittle bit different. I added salt, pepper and basil to the mayonnaise and parm mixture, and rolled the coated chicken in the panko bread crumbs. Will make again!
