I didn't have rice wine, so substituted rice vinegar. Sherry could be another good substitute. I've seen that used in other Kung Pao recipes.
Rather than cutting the chicken in cubes, I sliced it.
It was delicious.
In the past, I've under baked and used shortening to have a soft chocolate chip cookie. They were good, but these take good to a new level of deliciousness.

I didn't have Italian bread crumbs, so made a
Ittle bit different.
I added salt, pepper and basil to the mayonnaise and parm mixture, and rolled the coated chicken in the panko bread crumbs.
Will make again!
