I didn't have rice wine, so substituted rice vinegar. Sherry could be another good substitute. I've seen that used in other Kung Pao recipes. Rather than cutting the chicken in cubes, I sliced it. It was delicious.

I've made these for years. I use 1/2 cup Crisco and 1/2 cup butter and I under bake for a chewy cookie. Butter alone is good, but the cookie turns out flatter that way.

In the past, I've under baked and used shortening to have a soft chocolate chip cookie. They were good, but these take good to a new level of deliciousness. This is a great chocolate chip cookie. Thank you, mad monk Rasputin look alike. LOL

I didn't have Italian bread crumbs, so made a Ittle bit different. I added salt, pepper and basil to the mayonnaise and parm mixture, and rolled the coated chicken in the panko bread crumbs. Will make again!
