Here I've garnished with a dollop of crème fraische and some chives for color, topped with some artisanal course dark salt.
Adding the apricot bits later keeps them from scorching and caramelizing (they can get gummy enough to stick in your teeth). Plus, the longer they are cooked the more the concentrated flavor diffuses into the dish—it is better to leave it concentrated in the bits.
