Basic Soft Bread Recipe (White or Wheat)

Basic Soft Bread Recipe (White or Wheat)

I made a video recipe for this bread, you can watch it at https://www.youtube.com/watch?v=600USGwc3PU. It's a different way to make bread, but it produces a great soft chewy loaf that will stay soft for days. Hope you like it as much as we do. — melarky 8/24/2014
Maceys English Muffins

Maceys English Muffins

I posted this recipe. The photo that I posted is from the first time I made them. The baker that gave me the recipe had not included a baking time, so I just guessed and baked them for 25 minutes, but he later wrote to me and said that 15ish minutes would be best for these (he said every home oven is different so to just keep an eye on them, but 15 minutes is usually a good time for something like this). So they shouldn't look as browned as they do in my photo (that is what they look like after you toast them). They were still tasty, but I will definitely bake them less next time. If you're from Utah and have ever had the english muffins from Maceys grocery store or from Shaffer House Bakeries, these are the exact same. Shaffer used to supply Maceys with all of their bakery items, but a few years ago they started doing it all in house, but they kept all of the same Shaffer recipes, so these english muffins are from both bakeries. The retired baker gave me this recipe along w — melarky 4/29/2014

Super Simple Meatloaf

Super Simple Meatloaf

Yeah, our family loves this meatloaf too. When ground meat goes on sale, we will often make big batches of this this, and then we form it into those little disposable tin mini loaf pans (we pick them up at the dollar store, usually have a pack of 5 or so for a buck), and stick them all in the freezer. The reason we use the mini loaf pans is because you can cook those right from frozen (if you use the large regular size loaf pans in the freezer, you have to defrost the meatloaf the night before you want to use it so that the meatloaf cooks all the way through, if you cook a regular loaf from frozen it burns on the outside and is raw in the middle). We just stick a couple of the mini loafs in the oven to have enough for our family, so it's a nice quick meal. We also found that when they are the mini loaf size, they cut up for the perfect size to fit Walmarts french bread. I'm not a huge fan of some of walmarts stuff (I haven't been impressed with their meat or produce), but thei — melarky 9/28/2013
Potatoes 54

Potatoes 54

My family loves this recipe. Growing up it was a little gem in a novelty potato shaped cookbook my parents bought in Idaho, and this recipe is actually called something else in the book, but it was on page 54 so it eventually got re-named in our family to Potatoes 54. Now I make it for my own family and extended family, and there are never any leftovers at holiday dinners and potlucks. — melarky 5/1/2012
Grilled Flat Bread

Grilled Flat Bread

We also use this as a quick pizza dough. Just grill one side, then flip it, add sauce and toppings while the other side grills. If the cheese doesn't melt before you have to take it off the grill just pop it under the broiler for a minute. — melarky 4/23/2012
Chocolate Pudding Fudge Cake

Chocolate Pudding Fudge Cake

I love this cake sooo much. It is my go to birthday cake for myself (my husband actually made it for me this last year, but if he didn't do it, I would have :) It is so moist and tastes just as good the next day. I love it with a little ice cream, or just with a big glass of super cold milk. I also love it with milk poured over it, it just can't be bad with all that chocolatey goodness! — melarky 8/24/2011
Giant Cinnamon Rolls

Giant Cinnamon Rolls

@Bmw1980 - I never measure for the frosting, it's just a basic butter cream icing recipe. I think I probably melt about 1/4 C. of margarine in a large bowl, then add a teaspoon of vanilla and pinch of salt, and then just stir in powdered sugar until it's thick (like frosting thick, thicker than I would want for these). Then I just thin it out with milk until it is the consistency I like on the cinnamon rolls. Careful though, add only a small amount of milk at a time (it makes it thin in a hurry). I should probably write down exact measurements next time, but that's just how I always make it. Probably a little different every time, but oh so yummy each time too. — melarky 8/24/2011
Giant Cinnamon Rolls

Giant Cinnamon Rolls

If you use bread flour, you don't need to add the wheat gluten (bread flour has more protein and gluten than AP flour already). The wheat gluten just gives it a better texture, if you don't have it, you can leave it out, and the rolls will turn out good, they just turn out a little better with a little more gluten to help give it structure. We just made these again last night and they are so tasty, but I have to get rid of them soon, because I ate 2 of them by myself today (I can't be trusted), so I may try to give the rest away soon (shouldn't be hard, who doesn't like cinnamon buns?) — melarky 8/23/2011
Giant Cinnamon Rolls

Giant Cinnamon Rolls

I know it's bad, but I never measure when rolling them out. I just roll them out to a large rectangle (probably the size of a large cookie sheet), and then use the same cookie sheet to bake them. — melarky 7/15/2011
Hot Dog Chili New York Style (no beans)

Hot Dog Chili New York Style (no beans)

This was really good, it's easy to throw together and then just let it simmer down to the right consistency. You can also adjust the spices if you prefer more or less hot. — melarky 2/14/2011
Gyro Burger Patties

Gyro Burger Patties

I love gyros, but there isn't a really great greek restaurant close to me, so when I found this recipe I had to try it. I had tried a similar recipe where you make a sort of lamb meatloaf and use that for the filling, but it had a weird texture and just wasn't very good. This is the BEST home made gyro recipe I have found. The meat with the spices smells and tastes just how you want a gyro to taste. Try it out, you won't be dissapointed. — melarky 2/13/2011
Giant Cinnamon Rolls

Giant Cinnamon Rolls

I love these cinnamon rolls, they are by far the best ones I have ever had. I tried a bunch of different recipes before I found this one, and now this is the only one I make. The rolls are huge and soft, the crumb is really nice on the buns, and the filling is the perfect amount for these rolls. Try them out you won't be dissapointed. — melarky 2/13/2011
Easy No Rise Pizza Crust

Easy No Rise Pizza Crust

I posted this recipe. I tried out a bunch of different pizza dough recipes until I finally found this one. It's perfect, it tastes great and it is really quick to throw together (most other recipes required a lot of time for the dough to just sit there, usually overnight, to become the correct consistency. While those doughs are tastey, they aren't very practical if you want to make pizza quickly for a family, and honestly, this dough tastes pretty much just as great as those doughs). Give this one a try. — melarky 2/13/2011
Chicken Enchiladas with a twist

Chicken Enchiladas with a twist

We really like this! We had lots of leftovers..we put meals together using the enchiladas and refried beans. They reheat really well. — luvigutierrez 2/12/2011
Thanksgiving Leftover Bread

Thanksgiving Leftover Bread

I submitted this recipe, it is fantastic and it makes your house smell heavenly as it cooks (just like thanksgiving). It also makes really nice toast. This is a really fun treat especially around the holidays. — melarky 10/31/2010
Easy Navajo Fry Bread

Easy Navajo Fry Bread

I posted this recipe, and we love it at our house. It's a quick easy way to make a soft navajo fry bread that stays soft after frying. We love to make extras and whip up some maple frosting to put on them for desert. — melarky 10/10/2010
Copycat Chili's Southwestern Eggrolls Recipe

Copycat Chili's Southwestern Eggrolls Recipe

These are incredible, really really tastey. They are a bit labor intensive, but worth it. We always quadruple the recipe since it's just as much work to make 6 as it is to make 24+, and then we just stick them in the freezer and use them as needed. — melarky 10/7/2010
Anges Apple Bread

Anges Apple Bread

This recipe is actually from an old Andy Griffith cook book (called Mayberry Recipes or something). I remember my dad got it for my sisters and they used to make this all the time growing up. I'm so glad I finally found it online, it is such a keeper recipe. We made it last night, we used jonigold apples, and the batter seems a bit strange at first (I wasn't sure I was making it correctly because the batter was so dense and thick, I figured I must have missed something). But it baked up perfectly, and it tasted incredible. Give this recipe a try, you won't regret it. BTW - we left the nuts out since we don't like nuts in our sweet breads, so I don't know how it would be with the nuts, but it's fantastic without them. 9/29/2010
Chicken and Broccoli Alfredo

Chicken and Broccoli Alfredo

I followed the recipe except I added a bit more broccoli since it just looked like it needed a bit more. The recipe was good, it tasted like I would expect one of those boxed mixes to taste, but that's not really a bad thing considering it's meant to be an easy no frills recipe, and everyone in my family seemed to eat it right up (especially my 1 year old, he inhaled his whole plate). — KiasG 6/15/2010
