Technical support, computer geek, interesting pets, love playing games, learning photography, love my iPhone, love all sorts of music, but mainly heavy metal and some pop stuff right now (like Lady Gaga!). Love cooking interesting things in the kitchen at home, and having a way to keep up with the favorite recipes we come across. We love a good local food festival, and as many other interesting activities that we can get into, like DragonCon and the SCA.

Cheddar BiscuitsI used buttermilk instead of milk. The copy of the recipe I was looking at didn't list oil, though I think it will be a good idea to include next time. They were delicious.

Creamy White LasagnaThe standard size of cream cheese in packages is 8 oz. Also as I mentioned in comment below, I used 6 lasagna noodles, for 2 layers. 3 each layer. But you can really vary it however fits best for what you have to work with. (:

Perfect Peeled Hardboiled EggsI never actually let the eggs come to temperature before cooking, just put them in the pan with the water and let it all heat up together. This method NEVER fails me! It is awesome to be able to peel the peeling off the egg in 1 solid piece, EVERY time! Just be sure to break them good *before* they cool by bouncing them a couple times. Then you can cool them down to peel.

Easy Buffalo Chicken DipEveryone at work just can't get enough of this (me included). Never any leftovers! I actually made some from whole chicken pieces... cooked, cubed, then torn up - gives it the loose texture like canned.

Best Pie Crust EverOkay, this is totally now my favorite pie crust recipe. Everything always calls for shortening, and all I ever have is butter. This is just perfect.

Singapore Mai-FunI made the BBQ pork myself (recipe179282). After I poured the remaining caramel sauce over the meat, it was pretty saucy and I simply added the Mai Fun sauce to that. I just used 1 regular packet of Mai-Fun noodles from the grocery store, which was about 6 or 8 ounces..... I think the recipe would have been saucy enough for just a few more noodles, but it worked out fine that way. After making the dish the 2nd time we decided we preferred it with other Asian noodles (like lo mein style ones) instead of the rice noodles. I didn't want to add jalapenos, but I did add a few drops of chili oil. I retained the mushroom water and used it when creating chicken bouillon. [I posted this recipe.]

Chinese BBQ PorkI didn't have any shallots so I just minced an entire green onion instead. Worked great. I didn't have time to go by an Asian market to look for maltose so I just used sugar instead, which worked fine, though it may be a bit sweeter (honey is normally a better substitute). With mine I used about a teaspoon or so of sesame oil, a generous sprinkle of the pepper and a light dusting of salt... Also, I used sake wine. I only marinated for 20 minutes, then used the pork in Singapore Mai-Fun. Even through that curry/ginger sauce I could still taste the wonderful flavor. Because of the dish I was creating this for, I chopped the pork into chunks before preparing (after forking) so this cut down on the cooking time, too. [I posted this recipe.]
