What's for dinner?
I live in Lancaster Pa, which offers an abundance of fresh produce and wonderful meats. I enjoy cooking as it proves to be a great stress reliever. I work for a human services organization that provides services to adults with developmental disabilities. I have worked for this organization over 21 years.

I enjoy eating comfort foods that have been altered to reduce fat, sodium, and carbs. Eating healthy does not mean you must give up taste! I learned basic cooking techniques from my mother and grandmothers, who were all extraordinary cooks that never measured a thing!

Awesome Jalapeno PoppersMade these tonight, and they were amazing! Following the directions regarding letting the poppers sit in between breadings is key. Thank you for an awesome recipe!

Balsamic London BroilAllowed meat to marinate overnight. Great taste! Would not use marinade for any shorter of a time.

Taco Seasoning MixThis recipe is fantastic! I made heart healthy tacos using bison burger, 75% reduced fat cheddar cheese, and homemade pico de gallo. You will not miss the salt in the seasoning! Thank you for sharing this recipe!

Italian Wedding Soup (with Finesse!)This soup was fantastic! I used bison to cut down on the fat of the meatballs. I also used orzo, but only use about 3/4 cup or it becomes too thick. I substituted fresh spinach for frozen. Very tasty!

BJ's Chicken MarsalaThis recipe is a keeper! The marsala is not overpowering, and the overall taste is clean. I used chicken tenders only because that is what I had in the freezer. Thank you for a wonderful meal! My boyfriend gave rave reviews!
