Delissh!!! Of course, me being the frugal person I am, I used whatever I had available at the house: boneless chicken thighs instead of breasts, canola oil instead of olive, lemon juice instead of lime, pre-made guacamole from store, no salsa, no shallots & used a premixed bag of salad. And I cut the chicken ahead of time before cooking it and then did the marinade overnight. I will post the pictures soon. Thank your for such an easy recipe.

Impossibly Easy Chicken Pot Pie

This was an easy dish to make. I wasn't pleased because I doubled the bisquick & milk. I even cooked the chicken first in oil & some garlic and salt. And maybe I shouldn't have done that. I used cream of mushroom instead of cream of chicken. I don't know if I will be making this again. Maybe I should stick to the original recipe next time?

I made it again tonight. This time I didn't use any broth. I used 1/3 cup of lemon juice & 2/3 cup of water. Everything else was the same, except I browned the meat first, added 3 generous spoons of minced garlice, & generously applied garlic salt & black pepper. It turned out amazing and tasted good with mashed potatoes. I also thickened the sauce towards the end by adding a little bit of flour.

I made it in the crock pot. I used diet cola. I browned the chicken breasts first before throwing it in the crock pot. The outsides were full of flavor and sweet. But the insides were dry, as if I had boiled chicken breasts. I added 2 spoons of minced ginger & salt. Used half ketchup & half bbq sauce. The thought of all that ketchup would've been a sweet-tooth nightmare. At the end, there was a lot of juice left so I added flour to thicken the sauce. Maybe I should have cut some slits into the chicken pieces and it would have tasted better? Definitely not trying this again.

Amazing! Thank you to all the other chefs who left comments. Here's what I did different: 1st, I browned/seared the chicken breasts just to give it the brown color on the outside. I only used 1/3 cup (or less?) of lemon juice, 1/2 cup of vegetable broth (I can't have chicken broth b/c it's not halal). And I added three tablespoons of minced garlic (indians got to have garlic in their food), and I used more garlic salt than recommended. I added baby carrots one hour before it was done cooking. I cooked it on low and it was done in less than 6 hours. It turned out really amazing, very tasty. The chicken was so soft to the touch, the taste was amazing. Thank you thank you thank you! I will post pictures soon.
