Homemade Flour TortillasThis was my first time making tortillas and they were quite easy. I used butter instead of shortening and they taste pretty good. I definitely needed a bigger workspace to roll them out on because they were a little thick. A tortilla press would be ideal, but a rolling pin will do.

Texas Beef SkilletSecond review: I've made this several times now with black beans and without green bell peppers, without beans and with green peppers, and with both added in. I have to say that both added in is the best! Also, I don't brown the veggies before the meat. I brown the meat, drain it, then throw the veggies in until tender. Fewer steps, same result. :)

Mexican Stuffed ShellsIt's like a wonderful, creamy taco that you eat with a fork! Yum!!! I served them with finely chopped white onions and a dollop of sour cream on top and a side of lettuce. Will definitely be making these again!

Texas Beef SkilletI only added about 3/4 lb ground beef and didn't have any beans on hand, but this was still delicious! We like spicy stuff, so I added a little less than 1/2 tsp cayenne. Awesome flavor and only one skillet needed. I love that!

Mix and Match CasserolesVery versatile! I used 1.3 lbs browned ground turkey, 2 cans petite diced tomatoes, 1 cup water, 1 cup medium grain white rice, 1 pkg frozen spinach (thawed and strained), 1/4 cup white onion, 1 pkg dry Italian dressing mix, and 1 tsp black pepper, topped with 1/2 cup mozzarella and 1/2 cup Italian seasoned breadcrumbs. Delicious! So much food, my hubby and I have 2 nights of dinners!

Vidalia Onion Dip (Lower Fat)This is just extra input from my previous rating...I finally had rice vinegar on hand and I have to say that I prefer the apple cider vinegar I used previously. Try it, tweak the recipe how you want it, it's delicious! :)

Chicken with Creamy Dijon SauceI modified it a bit, added white onions instead of shallots, used butter and milk instead of whipping cream, and despise rosemary so left that out completely. Delicious! It's amazing what a little Dijon can do! Thanks for the idea for a quick weeknight meal!

Peanut Butter FrostingMy husband loves peanut butter, so I made a peanut butter/chocolate checkered cake & used this frosting recipe. It was a 4 layered cake, so I ended up having to double the recipe. Oh. My. Goodness. Is this recipe ever delicious?!? It was so light and fluffy and not too sweet! Will DEFINITELY use this recipe again!

Vidalia Onion Dip (Lower Fat)I'm not a Vidalia onion fan, so I've made this twice now with white onions an it is very yummy! Also, I'm one of those people that substitute ingredients where I can. I used veggie oil in place of olive oil, apple cider vinegar in place of rice vinegar, and I never have chives on hand. Still so much fresher tasting than store bought dip!

Money-Back Guarantee BrowniesFirst time making homemade brownies and these were delicious! First off, you don't have to add nuts to this...I hate nuts in my brownies, so I added some leftover mini chocolate chips I had sitting in my cabinet. Also, I have gestational diabetes, so I took another reviewer's advice and added whole wheat flour instead of white. Couldn't tell the difference if you tried! So they ended up being tasty AND healthier! Will DEFINITELY be making these again! :)

Whole Wheat and Flax WafflesJust tried these this morning and boy are they GOOOOOD. I didn't add the flax seed, but I did add some ground cinnamon and a touch of vanilla. I usually just make the recipe on the bisquick box, but I've developed gestational diabetes and have been looking for a tasty wheat recipe for some time now. These were AWESOME!

Spicy Porcupine MeatballsHonestly my review is just for the sauce. I don't use this meatball recipe. I make up my own using 1 lb of hamburger, 1 egg, 3 slices of whole wheat bread (toasted & crumbled), 1/2 small white onion (the other 1/2 goes in the sauce as directed), about 1 clove minced garlic, dash of teriyaki sauce, pepper and cayenne to taste. The sauce is absolutely WONDERFUL! we like ours super spicy, so I just shake the cayenne to my liking. :) We like to serve it with rice to neutralize some of the heat.

Beef Casserole with Creamy Cheese PastaThe best way I can describe this is like a heartier homemade hamburger helper. I used whole grain rotini instead of shells, and made an oopsie by not realizing there are TWO different measurements of broth in this recipe and added too much to the beef/tomato mixture. I just let it cook down some and it turned out fine. Also, the recipe doesn't include an oven temp, so i just put it at the standard 350 degrees and it turned out great! Let me tell you, for anyone saying this is flavorless, change what tomato sauce you use...it's all dependent on the spices in the sauce.

Chicken Tacos with Lime-Cilantro CremaI haven't made the crema, but the taco seasonings are in a wonderful proportion. I use one large chicken breast since it's just me & my husband and boil it to get it tender. Once that's cool enough, I just shred it by hand, add the seasonings, add a few teaspoons of diced jalapeƱos and their juice, a bag if 10 minute instant rice and enough chicken stock to soak into the rice. It's WONDERFUL hot and cold as leftovers! :)

Easy Taco Soupjust made it tonight & it's soooooo easy! i followed other reviews and added 2 packets of taco seasoning, a can of rotel instead of the tomatoes, and added about half of a medium white onion and let it simmer for a little while adding more water as needed. i also decided to chop a little bit of romaine lettuce to top it with (which was yummy and added some nice color). i will DEFINITELY make it again!

Bread ConesGreat idea! Haven't tried it yet, but it seems like you could substitue dry yeast for the active yeast and make it in the bread maker, so I think I might do that to eliminate most of the effort..."DaBlackCrystal", bread flour is different than all purpose flour, but only gives it a slightly different flavor and texture and can easily be replaced in most recipes if you don't feel like spending money on different types of flour. I myself just usually use all purpose. Can't wait to try out these little beauties! :)

Favorite Slow Cooker Italian Beef SandwichesVery yummy! I think I had the wrong cut of meat as it didn't shred AT ALL. I ended up having to cut it, but it was still delicious! One thing I had to add was slivers of onion. How can that not be an obvious addition to this?!? It was soooo good with onions! A GREAT recipe for the crock pot. Will definitely make it again!

Cinnamon Sopapilla CheesecakeThis is such an easy recipe to throw together! I literally looked in the fridge for crescent rolls to bake with dinner and remembered this recipe instead for dessert. The first time I tried this was warm with a scoop of vanilla ice cream...melts in your mouth every time!
