Frito Lay Bean DipMan, this is GREAT! Better than the canned stuff at less than 1/4th the price! I did add about 4 more jalapeno slices because I like it SPICY, but the next time I make it, I'm leaving out the salt as the corn chips are salty enough.! I took some to work today and had 3 people ask me for the recipe.

20-Minute Chicken ParmesanI just made this is it was GREAT! The only change is that I oven fried the chicken instead of pan frying. I sprayed a sheet pan with cooking spray before I placed the chicken on it. That saved quite a few calories! Baked it for 20 minutes, spooned on some sauce and shook on some grated Parmesan cheese and returned it to the oven at 300 degrees for 10 minutes.
