I loved this recipe!! I have already made the carnitas 3 times and every time they were a big hit. My mom always told me that fat = flavor so I picked a cut of pork with a lot of fat. I think the fat also helps so the meat doesn't get dry. Also, I didn't sear mine and they were perfect with just garlic salt!!
So glad you liked these, i agree, the fattier the meat, the better flavor...actually, when i sear them, I use bacon fat...my heart says...noooooooooo but my tummy says...ooh thats tasty...welcome to bigoven.
