Chicken and White Bean Chili

Long Connecticut winters are ideal for cooking, and keep the house warm too. I enjoy cooking, and any kind of meat is a fun thing to cook right now. I love trying out new recipies.

My mom came from Germany, my Dad from Hungary and I grew up eating a lot of ethnic dishes. I wish I got my mom's kuchen recipe.

Great dish! I added an extra layer of noodles to make 2 layers instead of 2. And I still had another layer of noodles left over. Next time I'll double the sauce! Extremely delicious !!!

Rosti (Swiss Fried Potatoes)

This IS a timeless recipe. I did take some shortcuts tho. I cooked the bacon, and let it set. I boiled the potatoes for 5 minutes. (15 is too long). Then I grated them after peeling, and 1/2 way through grating, I added pure olive oil so they wouldn't stick, adding then the onion and bacon. (sprinkle the oil all over 1/2 way through). Then I preheated the oven to 350, and put a cookie sheet on the grate to warm up. Incredibly, the mixture flew into a greased round pan, with butter sliced over it (1/2 stick total) and made it into the oven for an hour. Everyone loved it because I was able to make a steak while this bugger was cooking.

A wonderful tart! I had to compensate the recipe a bit. I used aluminum foil (ungreased) over the baking sheet. It was much easier to flap over the crust. The 5 mac apples that I used were enough for one layer. The raisins and walnut amounts were enough for one layer also. If you make 2 layers, I would suggest you double the apples, raisins and walnuts, or keep the edges to 4 inches. Way too much lemon! Just use 1/2 the zest of 1 large lemon.

I've found this recipe, and I had some leftover celery and carrots from last nights buffalo wings, so I gave it a try. The recipe's ingredients call for bullion cubes, but doesn't say where to put it in. The 4 cups of milk is way too much. So this is what I did... I cooked the chicken as directed. Instead of water, I used the Swanson 1 lbs. 33% lower sodium chicken broth and water to cover my 5lbs of chicken. I let that cook up while I cooked some white rice and reserved. Then I chopped up the celery, carrots, a leek, a parsnip, 1 whole onion and sauted that in the same dutch oven after removing the chicken and broth. . After the chicken was cooked, I had to put the colander in another dutch oven... then dump the chicken in there, so as to reserve the broth and chicken. Remove the chicken and place on the counter to cool. While the chicken cools, sautée the veggies in ¼ butter so the veggies are par buttered (boiled) about 15 minutes, then add the mushrooms and cook for about 5 min
