What's for dinner?

 I enjoy trying new recipes and preventing meals from being routine.  Baking bread is something I am presently learning about.  I really like the no-knead method of baking bread.  It is so easy.

I love eating anything with cheese and more cheese.  I also like Italian pasta dishes perhaps because of the cheese, or maybe it is the wine that usually accompanies a dish.   I like cooking dishes that have ingredients that are easy to find and reasonable in price.  Summer is here so now I will be enjoying more salads making up for the winter of cheesy comfort foods. :)

Coconut Chocolate Almond Cheesecake

An update for my cheesecake recipe. We made it last week and instead of using the melted semi sweet chocolate chips drizzled on top we used just chocolat syrup drizzled on a slice when served and it was great too! The semi sweet chocolate drizzled gets hard when cooled and breaks up when cutting. So I think we prefer the syrup. Same great taste.

Coconut Chocolate Almond Cheesecake

If you like cheesecake you will love this recipe. It is rich and a heavy cheesecake loaded with coconut, chocolate chips and almonds. If you want to try to make the cheesecake healtier you can use light cream cheese for two of the 8 oz. packages. However, it is really not a recipe you want to try to make healthy. After all it is cheesecake! And worth every bite. It does freeze well if you have any left over. [I posted this recipe.]

Spinach Artichoke Dip

While it was good, it seemed to be missing something for flavor it just did not have zing! It was very creamy, and cheesy, easy to make. But seemed a bit bland. I will try it again but will add some spices for more flavor. Most dips I have had when dining out seem to have something that is a distinctive flavor making it just seem awesome. Do take into consideration that my family and me seem to like things a little spicy.
