What's for dinner?
Hello. I live in Columbus Ohio and I only have one hobby, cooking. I am most definatly not a chef just an advanced mediocre cook. My real job is as a radio station engineer for three local stations. My style of cusine, or as close to a style as I can get, is French American with Chinese infulences and recently North Africen. I love to experiment with spices and sauces and most of the time what I make isn't horrible. My work mates are my testers and for the most part they don't complain much with the exception of saying what I make is just too much trouble for them to do on a regular basis.

My favorite food to cook is chicken. Of all the meats out there chicken seems to offer the greatest latitude for experimentation. My favorite meal to cook is Beef Wellington au fromage bleu (my invention since I do not like foie gras) where I use drained hard tofu mixed with very good blue cheese.

I was looking for something different to do with chicken. This one qualifies and tastes wonderful. It makes for a great presentation. A little more brie would be good but then I really like brie. My only suggestion would be to stuff the chicken instead of placing the apples between the loin and breast. Mostly because the loin on most breasts does not cover enough and the apples and brie leak out easily and also it is sometimes hard to get chicken breasts with the loin attached (for a good price).

I added a few fresh mushrooms to the sauce and a baked potato. My only complaint or suggestion is to use fresh quartered artichoke hearts as the canned ones have a bit too much flavor and overwhelm the chicken.
